    1/2 block extra firm tofu (not silken)
    vegan Worcestershire sauce
    soya sauce
    crushed/ground tomatoes
    1-2 garlic cloves, crushed
    onion powder
    dried basil
    dried celery
    dried thyme
    red wine (optional)
    salt & pepper
    vegetable oil
Press the tofu and crumble it into a pan with a bit of oil. Fry on med-high until the pieces of tofu are golden and chewy (10 minutes or so).     1/3 cup hot water

    1 teaspoon sesame oil
    3/4 pound spaghetti, cooked and drained
    fresh coriander for garnish
Combine peanut butter and water.  Stir until smooth.  Add soy sauce, garlic, non-dairy creamer or soy milk and sesame oil.  Stir until smooth.  Set aside.
Cook pasta, drain well.  Stir peanut butter sauce and add to spaghetti.  Stir. Garnish with fresh coriander.

Ingredients (use vegan versions):
    1 tin of tomatoes (about 400ml)
    3 teaspoons minced garlic
    4 teaspoons minced chili

    1/2 cup fresh hummus
    2-3 small tomatoes, diced
    1 small onion, diced
    juice of two limes (about 2-3 tbsp)
    dash of cayenne

    cilantro (optional)
Place all ingredients in food processor and blend for very short amount of time until quite smooth.  I recommend adding the cilantro in afterwards to that the green color doesn’t make the sauce look like algae….
I found that it worked much better when the chunks were small so that they all stayed on the burger.

Thick and Decadent Chocolate Sauce
Ingredients (use vegan versions):
    1 can coconut CREAM
    2-4 tablespoons Cocoa
    2 tablespoons white sugar (vegan)
    2 tablespoons brown sugar (vegan)
Dissolve white sugar and cocoa in a tiny amount of water (e.g. 1-2 tablespoons hot water).  Mix brown sugar and dissolved cocoa/sugar into coconut cream.  Mix really well and refrigerate.  Spoon onto pudding/cake/’ice cream’ or eat on its own like a pudding…. Seriously yummy!

Creamy Vegan Béchamel Sauce
Ingredients (use vegan versions):
    1 Tablespoon olive oil
    3 Tablespoons vegan margarine
    4 Tablespoons flour
    1 1/2 cups soy milk
    3/4 cup water
    veggie bullion for 2 cups liquid
    1 package silken tofu
    1/2 a tub of vegan cream cheese (Tofutti)
    1-2 slices of vegan cheese slices (optional) (Tofutti)
    pinch fresh nutmeg
    black pepper
1. In a large bowl, blend together the soy milk, water, bullion, tofu, and cream "cheese".
2. Make a roux by heating the oil and melting the butter in a large saucepan.  Add flour and whisk over medium-high heat for a few minutes, making sure it doesn’t burn. Pour this mixture into the blended ingredients and mix.
3. Return ingredients to saucepan and whisk until it thickens a bit, then simmer on low for a minute or two. Add nutmeg, black pepper, and tofutti slices if using. Set aside until ready to use.
Serves: about 4 cups
