These Hard Cooked eggs have none of the sulfur flavor that hard boiled eggs have, and they keep more of the enzymes that make Eggs good for you. While boiling “folds” the proteins in eggs, by cooking the egg at a lower temperature the bonds are not “re-folded” as often so the resulting egg has a slightly chewy yolk texture rather than the hard crumbly yolk, and the whites aren’t as firm but the the end result is absolutely delicious.
